Lovely Lemon Loaf
Ingredients
3 large eggs
1 cup of granulated sugar
1 cup (8 ounces) of sour cream
or greek yogurt
1/2 cup of canola or vegetable oil
2 tablespoons of lemon zest
2 tablespoons of lemon extract
1 1/2 cups all-purpose flour
2 teaspoons baking powder
1/2 teaspoon salt
1.pre-heat oven to 350F and spray a 9x5-inch loaf pan with cooking spray set that aside
2. in a large bowl add eggs, sugar, and sour cream (yes i said sour cream) and whisk until smooth and combined
3. drizzle in the oil needed, whisking until combined
4. add the lemon zest and lemon extract
5. now add the baking soda, flour, and salt and stir until combined don't over mix it or else it becomes tough, some lumps are okay don't try to stir until it's perfectly smooth
6. pour mix into prepared pan and smooth top lightly with a spatula and bake for 50-52 minutes or until top is rounded and when you stick a toothpick is inserted and comes out clean
7. allow loaf to cool in pan for at least 30 mins
8. let's eat!
